Fondant For The Future

This video was inspired by the fact that I had a birthday cake order with fondant and had never made fondant before. That is all. Oh, and did I mention you will never buy store bought fondant again?

Yield: 4.5lbs - 5lbs

INGREDIENTS:

Fondant:

2 lbs (907g) powdered sugar sifted (plus extra if thicker fondant desired)

1 lb (454g) marshmallows

2 tbsp warm water (For dark colors, 1 tbsp warm water and 1 tbsp food safe coloring)

2 cup (113g) coconut/vegetable shortening

INSTRUCTIONS:

  1. Generously coat a pot with non-stick spray and melt marshmallows over medium heat until gooey.

  2. Pour water into pot melted marshmallows, gently stir, and pour mix into the bowl of a stand mixer with the dough hook attachment.

  3. Add in your shortening and start mixing on stir/speed 1.

  4. One cup at a time, or spoonful, add in your powdered sugar and save one cup for kneading.

  5. Mix fondant on low until smooth and malleable

  6. With a dough card or spatula, scrape fondant into a bowl with remaining powdered sugar

  7. Knead the mixture until remaining powdered sugar is incorporated

  8. Turn fondant out onto a *CLEAN* lightly powder sugared surface and knead until stretchable like taffy without tearing
